Product Detail
This Greek white wine is a highly unique, biodynamic white wine produced by renowned winemaker Apostolos Thymiopoulos in Naoussa, Macedonia. It is a rare "blanc de noirs" blend, typically combining the local red grape Xinomavro (vinified without skin contact to yield clear juice) with the highly aromatic white grape Malagousia. Fermented at cool temperatures in stainless steel tanks, this expression captures the vibrant, sun-drenched terroir of Northern Greece.
Taste Profile
  • Aroma: A vivid bouquet featuring white rose, jasmine, bergamot, lemon zest, ripe peach, and honeydew melon.
  • Flavor: Crisp, lively, and medium-bodied with flavors of green apple, juicy citrus, and a hint of mint or rosemary oil.
  • Finish: Dry and zesty with a signature saline tang, light mineral crispness, and a slightly waxy, textured mouthfeel.

Food Pairings

  • Seafood: Excellent alongside grilled fish, shrimp pad Thai, or raw oysters with lemon juice.
  • Traditional Greek Dishes: Perfect for stuffed vine leaves (dolmades), spanakopita, and Greek salads heavy on feta cheese.
  • Light Mains: Pairs beautifully with spinach or herb risotto, quinoa salads, and chicken cooked with sweet peppers.
  • Spicy Appetizers: The clean, fruit-forward acidity acts as a fantastic balance for vegetable spring rolls.
